There are several ways to tune a guitar or other stringed instrument, and everyone does things their own way.
For me I like to keep the one I play the most in Eb standard eb Bb Gb Db Ab Eb
Which I will alternatively play in Drop Db eb Bb Gb Db Ab Eb
Of course its always a good idea to keep one in standard tuning as its the most common tuning and likely to be the tuning someone else will be using if they come to jam. e B G D A E
and alternately in Drop D e B G D A E
Personally I always loved Open G tuning. It sounds very bluesy. d B G D G D
Open G is also a standard tuning for the 5-string banjo d B G D g <----drone string
Mandolin standard is e A D G
but can also be tuned to Open G d G D or B G

I cheat when I tune my guitar (aka use a tuner). I was never able to tune it by ear, at least not well enough to do it correctly.

Im just too anal to tune by ear, it has to be dead on note for me. I only tune by ear in a pinch.
